Mary Mack’s Facility is SQF Certified for Floss Sugar, Frozen Lemonade, and Syrups Manufacturing

Mary Mack’s, manufacturer of shaved ice, floss sugar, and snow cone syrup, gained SQF certification for their North Carolina facility with the help of Kellerman Consulting.

The Overview:

Mary Mack’s initially sought out Kellerman Consulting, with the desire to gain SQF certification to meet the GFSI-recognized certification requirement to sell their products in certain large grocery store chains. Kellerman Consulting stayed with Mary Mack’s until they gained SQF certification; sticking with them throughout the process of building a new facility and through key staff changes as they were growing and expanding their business.

 

The Result:

With individualized attention and support from Kellerman Consulting, Mary Mack’s gained their SQF certification for their North Carolina manufacturing facility.

Our Process

Intake Process and Food Safety Gap Assessment

  • A client intake form was completed by Mary Mack’s and the existing food safety programs, policies, and procedures were sent to the assigned Kellerman Consulting Registered SQF Consultant.
  • The Kellerman Consulting Registered SQF Consultant created an initial draft of the Mary Mack’s SQF Certification Program and she incorporated the existing food safety programs and identified any gaps where additional policies, procedures and training was needed. 

Program Development

Documents designed to meet SQF Edition 9 standards were created to meet Mary Mack’s products and processes. 

Implementation

  1. Implementation calls were held weekly to review, explain, and tailor each program to fit the needs and operations at Mary Mack’s, to guide their teams through implementation and to train them on all the SQF requirements.
  2. Training and guidance was given to Mary Mack’s during the process of building their new manufacturing facility to make sure that the facility would meet SQF Edition 9 standards.
  3. Mary Mack’s experienced the loss of key staff members during implementation, however, new staff members were able to be well trained on the SQF program by a combination of Kellerman Consulting and Mary Mack’s employees prior to the SQF certification audit.  

Audit Preparation & Support

  • A full-day site visit was conducted to complete a full in-person internal audit of the SQF program. 
  • Findings from the Internal Audit helped guide final efforts to prepare for the audit and close all identified gaps in the program. 
  • During the audit, our Registered SQF Consultant was available to offer support and then he helped close out the corrective actions and an SQF certificate was issued by the certifying body.
